Would one normally include or exclude “unknowns” when calculating the totals for variables?

Would one normally include or exclude “unknowns” when calculating the totals for the following variables:


a. total population

b. educational attainment categories

c. employment (unemployment, female employment)

d. occupation type?

If include, can someone confirm that totals and percentages can be calculated by removing the “not in universe” values only?
